This section outlines where the akevit work will go once that track opens.

Akevit experiments. These are the first directions we plan to explore.
Base spirit structure?
Which base profile should we test first to carry spice cleanly while keeping texture and length? Obviously potato spirit, which is the traditional Norwegian way.
Cask influence?
Once trials are scheduled, which wood and seasoning routes are most worth mapping for restrained maturation? Again, the "norwegian way" is a good place to start. Used madeira or sherry casks
