Future experiment stream

Mezcal experiments are planned for a later phase as the project expands beyond the current tracks.

This section outlines future mezcal directions and working questions, without claiming active trials or results yet.

Active research tracks now: whisky and rum.

  • Agave character framework (planned)
  • Smoke carryover test plan
  • Cut protocol draft notes

Mezcal line of experiments

Mezcal experiments are planned, not active yet

Current active tracks are whisky and rum; mezcal will follow as a later phase.

When that work begins, it will use the same no-rule method: define one question, run controlled trials, and publish what actually holds up.

  • Possible direction: compare agave sourcing and cook profiles to see how base aroma may shift.
  • Possible direction: explore how smoke and fermentation choices could balance structure and brightness.
  • Possible direction: map still behavior, cut strategy, and restrained wood influence when trials open.

Planned priority

How might roast and smoke carry through?

A future exploration of whether pit-roast intensity and smoke compounds can stay expressive from fermentation through distillation.

Which still behaviors should be mapped first?

Planned trial design for comparing heat input, reflux shifts, and cut timing across different charge strengths and run speeds.

What should early batch comparisons target?

A forward plan to define repeatable note-taking for flavor, texture, and aroma differences once paired mezcal batches are developed.
